Resumen
Allium sativum, known in some countries as "garlic", is a crop that is predominantly produced in Asian countries; China alone produces about 80% of the world's garlic, and China, Argentina and Spain together account for about 90% of world production; therefore, only a minimal share is produced in more than 100 countries, including Peru. Therefore, this paper presents a preliminary analysis of the sustainability of garlic cultivation in Peru, focusing on three garlic producing areas in the Arequipa region, being the most representative. The sustainability of the crop was evaluated based on three dimensions: Economic, Ecological and Sociocultural. The indicators analyzed had to reach a minimum value of 1.9. The analysis revealed that the production zones of Valle de Majes and Camaná have sustainable production systems in the three dimensions analyzed. However, the La Campiña zone did not reach the minimum sustainability value, especially in the economic dimension.
